Meat & Potato Pie Recipe
Ingredients:
Included:
500g beef skirt, diced
2 small/1 large onions, peeled and chopped
2-3 potatoes, peeled and chopped
1 beef stock can
Not Included:
Salt & pepper to taste
Water
Gravy granules or cornflour to thicken
Puff or shortcrust pastry
Egg or milk for brushing on the pastry
Method:
1) Put the beef skirt and chopped onions in a deep saucepan/stock pot with the water (enough to cover the meat plus approx. 1 inch) and a stock cube and bring to the boil
2) Leave to simmer gently for approx. 1 – 1.5hrs then add the chopped potatoes, bring back to the boil and cook until potatoes are softening
3) Thicken the sauce with gravy granules or cornflour and season with salt & pepper to taste (bear in mind the stock cube and gravy will contain salt so you shouldn’t need much extra) then transfer into a pie dish
4) Top the dish with the pastry of your choice, brush with an egg or milk wash and bake for 20-25 minutes on a gas 5/180° until the pastry is golden brown
5) Serve with your choice of peas/pickles/sauce and enjoy!!
